This little inspiration came to me after a Pinterest search in the hopes of finding something healthy and filling to eat that won't kill me. Ha good luck right? Well luckily I was able to whip up a much healthier version of this comfort food that what I found online. This is pretty easy to make and you can store your leftovers for up to a week in the fridge. Great for lunches on the go or at work when everyone else is killing themselves with french fries again.
1 large bunch of fresh broccoli. Crowns are fine too about 1 1/2 pounds of broccoli
1 large chopped onion
2-3 garlic cloves chopped
32 ounce carton of chicken stock
1/2 cup heavy whipping cream
1/2 tsp nutmeg
In a stock pot saute' onions, celery, broccoli, and garlic in 2-3 tablespoons olive or coconut oil. When onions and celery become translucent whip with hand blender in pot. Thats the easy way. If you don't have a hand blender like me you can do what I did. I transferred the ingredients in the pot to my blender, blended it and returned it to my stock pot.
Add your chicken stock and bring down to a simmer. I added 1/2 cup of heavy whipping cream. Add nutmeg stir and simmer for 15 minutes to marry flavors. Salt and pepper to taste.
You don't really need to worry about how much of this you eat. There is not enough calories in the whole pot to do any damage to your diet. I kept the leftovers in a sealed container in the fridge and it lasted my husband and I an entire week. I had a bowl everyday for lunch and anytime I felt hungry outside of mealtimes. I treat this as a free food when on HCG injections and It helps me quite a bit to stay on the diet without any cheats. My dad who was a European born and trained chef once told me that the nutmeg is a little trick they use in high end restaurants to make it taste really good. He is right because this soup tasted more like I was getting away with something I shouldn't be getting away with on HCG. Give it a try and let me know what you think of it.
