Sweet Blooming Onion Sauce P2 Style and Pecorino Parmesan Crusted Baked Zucchini

I stumbled across this recipe on Pinterest as I was looking for some new ways to get my vegetables into my diet in a healthy way that would be P2 safe as well as something that tastes amazing.

I love to make things taste like there is no way that this could be diet safe.  This recipe definitely fits the bill.  It was so good that my husband and I had a fork fight over the last couple pieces.

The original recipe calls for a cup of mayo in the dipping sauce and panko bread crumbs for the breading of the zucchini.  I made a couple changes to make this P2 or HCG friendly.  This recipe will work for any low carb, eat clean, or diabetic diet.  Not just the HCG diet.

Cut up 2 large zucchini add to strainer and lightly salt zucchini.  Let this sit for up to an hour.  You will notice the zucchini sweating losing water.  This is the result we want.  While the zucchini sits start your dipping sauce.

Sweet Blooming Onion Sauce P2 Style:


ingredients:


  • 1 yellow onion
  • 1 tablespoon butter
  • 1 tablespoon organic raw honey
  • 1 tablespoon dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 cup Greek yogurt

Cut onion into slices and saute in butter over med heat until onions caramelize.  This can take approximately 20 minutes.  Make sure the temp is low enough that the onions do not burn.



Once onion is cooked add them to your blender along with the honey, mustard, and cider then blend.  Put this mixture in the fridge while you prepare your zucchini.



Take your Blooming Onion Sauce out of the fridge and add 1 cup of Greek yogurt to the mix.  Fold it into your mixture adding a little salt to taste.













P2 Pecorino Parmesan Baked Zucchini:


Ingredients:

  • 2 large zucchini
  • pecorino parmesan cheese finely grated
  • wheat germ
  • oregano
  • egg
  • salt


Preheat oven to 450.  Spray pan with olive oil.  Add 1 beaten egg to a bowl to dip your zucchini into.  On a plate add approximately 1/2 cup of pecorinio parmesan cheese that is finely grated not what you see pictured to the left, oregano, approximately 1/4 cup of wheat germ, 1/2 teaspoon salt.

Dry off your zucchini with paper towels.  Dip zucchini into an egg wash then dip into cheese mixture.




Add zucchini to your pan sprayed with olive oil and bake for approximately 15 minutes or until browned turn and then cook another 15 minutes depending on the size of your zucchini strips.

Note:  I made this on 2 more occasions.  It was just my husband and I that ate this on our first try which was the picture above with the parmesan that is grated into tiny slivers.  The first time we made it following the recipe closer by adding two tablespoons of honey to the sauce.  It was good that way and reminded me of the Outback's version but for me it was way too sweet so the second time we made sauce we tried it with less honey and 1 tablespoon or less is better for me so I reflected that in the recipe but you can alter it if you like it sweeter.

After making zucchini the next night to go with our leftover sauce I tried the zucchini with panko since we just happened to have some we never opened in the pantry, we were curious about how it was supposed to taste.  I did not like it and my husband said he did not like it either.  He preferred the HCG friendly version that I made the first time pictured above but, I didn't like the way that the crust turned out the first time with the cheese that was grated into slivers.  It was uneven and burnt in some places so this time which is now the third time I made it as described above in recipe and the change I made was using pecorino that was finely grated to a powder.  The crust I got resulted in what you see above pictured with the sauce.  It came out very evenly cooked.  It was a nice crust that gave a good crunch.

This recipe does work well for the HCG diet.  This is not something that would be on the original protocol but since Pounds and Inches was originally written many new developments have been made.  For instance we know that it is no longer just calorie in and calorie out.  The Atkins and South Beach opened our eyes to an easier more natural way of eating that will help us put our bodies to work processing our own food rather than feeding it food that has already been processed for us leaving our bodies no work to do other than get fat.

We tested ourselves and studied the results of thousands of other HCG dieters and find that it is not necessary to stick to a 500 calorie diet.  In fact we find that if you consume more calories and more of the right fat fighting foods you can actually lose even more weight than you did suffering on just 500 calories.  The ingredients we use in our recipes are chosen for their fat burning properties such as CLA in pecorino and they compliment any phase of the diet.
