P2 Curry Chicken

I used to have this at least once a week.  It was a favorite dish of mine, my daughter, and pretty much anyone that had ever tried it.  I used to thicken the sauce and spoon it over white rice BEFORE HCG.

It wasnt the most P2 friendly dish and I havent had it for a couple years now.

I had a craving for something good and tasty and thought I could probably bring this up to P2 standards with just a few tweaks.  It worked and my curry chicken is now back on the menu!

  •  4 oz cubed chicken
  • 1 whole onion
  • chopped garlic
  • sliced red pepper
  • 1 can water chestnuts sliced
  • 1 can bamboo shoots sliced
  • 1-2 tablespoons coconut oil to cook with
  • curry powder
  • salt to taste
  • garlic powder to taste
Saute onion, red pepper, & garlic in 1 tablespoon coconut oil.  Brown chicken in same pan adding spices above, water chestnuts, and bamboo shoots.  Sprinkle with curry powder.  I like lots of it and love it spicy.  I probably add 2-3 tablespoons of curry to this dish.  You can eat this entire thing without any guilt.  Its mostly veggies and the water chestnuts and bamboo shoots add up to a whopping 55 calories if you eat the entire thing!
